Recipe: Frozen lemon pucks

I don’t know about your neighborhood, but here in Niles it’s Citrus Central. Trees are heavy with oranges and lemons, and it seems like everyone is either asking for lemons or trying to give them away.

When a friend gave me a dozen or so, I knew I couldn’t use them all before they went bad, so I squeezed them (after giving them a good scrubbing) and froze the juice in an ice cube tray..

Then I got to thinking about the squished half-lemons that were left behind. Surely they were good for something? I plopped one in a glass of water and behold, they still had plenty of flavor to contribute. 

So I froze them on a tray and put them in a bag, and I stick one in my water glass every morning for a pop of lemon flavor.

Freeze lemons on a tray, then throw them into drinks for a hint of lemony goodness.

I also freeze strips of lemon peel for chopping and adding to recipes, but I like this lazy way to squeeze one more good thing from my lemons before they go into the compost bin.
